The longterm plan for Oval is to be a pop-up “happening” restaurant that expresses our joy for food and bringing people together at the table. That’s kind of the generic bit about it. The nice thing right now is that this is all exploratory and subject to much change. In my head I see this pop-up being in a public place (possibly a closed diner) and serving food for a very finite period of time one night. The focus will be on supreme quality ingredients and well executed technique.
So, Oval, what about that? Well when this all came into my head I was thinking about a few things if I were to do a pop-up restaurant. What isn’t available in my community in the evening? What can be prepared in a fast manner and also be held at a stable temp? What is really tasty, goes well with many different things and deserves a feature? Answer: Eggs!
Hence, Oval started as a concept for what would be the focus of at least this first venture. I cook a lot with eggs. I love them and I prepare them in a plethora of different ways.
I’ll continue distilling this concept (with the help of others) and we’ll see what comes out the other end. I think it will be quite fun.
